A yellow pie to Livestrong!

Barbara is an amazing woman. I met her through our foodblogs and then we discovered that we lived 10 Km far from each other (or less) and moreover that we bought our organic grocery from the same shop... The first time we met she had lunch with us and the girls loved it! Then we met several other times enjoying talking about food and foodies... as foodbloggers love to do... Then she and her lovely husband Bryan went for a trip to Australia... When they came back, they decided to move back. They were able to organise their move in about a month... Incredible! So they moved to the Gold Coast in Australia were they met each other some years before and where they want to have all their memories... She is very happy to be there and to enjoy the sun and the lifestyle! And sincerely said, even if I miss her, I am happy that she is so happy!


She is the promoter of the Livestrong blog day event and I would like to give her our small contribution to such an important cause!


The recipe for the blog event had to have some yellow... When I prepared this pie the pastry was really of a nice eggy yellow. Then after baking it, it turned into a yellowy brown... But the taste was really pleasant and warm. This is a free interpretation of both my grandmother's recipe and the typical apple pie recipe...

Ingredients:

300gr white flour
150 gr butter
80 gr sugar
1 pinch of salt
3 egg yolks

for the filling:

1 kg (about) of Apples peeled and diced
1 Teaspoon of cinamon
2 Tablespoons of sugar
the skin and the juice of one lemon
1 egg yolk for the surface

Combine flour, salt and sugar and the egg yolks and the butter as to create a classic pastry. Don't work the ingredients too long, but enough to create a ball. Cut the ball into two and then wrap them into plastic wrap and leave it in the fridge for about 30 minutes. In the meantime preheat your oven to 180°. Combine sugar, and spices in large bowl. Use your hands and mix in the apples and the lemon skin and juice so they are well coated. Remove one crust disk from the fridge. Let sit at room temperature for 5-10 minutes. Sprinkle some flour on top of the disk. Roll out with a rolling pin on a lightly floured surface. Add a few sprinkles of flour if necessary to keep the dough from sticking. Gently fold in half. Place on to a 24cm pie plate, lining up the fold with the center of the pan. Gently unfold and press down to line the pie dish with the dough. Spoon in apple filling. Roll out the second disk of dough, as before. Gently turn over onto the top of the apples in the pie. Pinch top and bottom of dough rounds firmly together.
Brush an egg yolk over top of pie. Bake pie until crust begins to turn golden, about 45/50 minutes, Transfer to rack; let stand 1 hour. Serve pie warm or at room temperature.
